From reducing food waste to making conscious choices about what we source and serve, the global restaurant industry has the potential to influence the eating habits of billions of people.
This five-day course was developed to provide for the future of sustainable business in hospitality and to encourage new practices and traditions that drastically reduce the footprint of food. Specifically, it prepares hospitality professionals to take a leading role in their organization’s journey to become environmentally responsible. The knowledge provided is comprehensive, including practical tools to calculate menu emissions and proven examples of sustainable supplier relationships. You’ll leave equipped to critically evaluate and reduce the environmental impact of your business at every level, and fueled with renewed motivation.
You’ll return to your work with:
- New skills to lead change, from immediately reducing your workplace’s impact on the planet to setting long-term goals for operating sustainably.
- A deeper understanding of the research and data on the climate crisis and an enriched frame of reference of what a sustainable hospitality business looks like.
- Strategies for sourcing ingredients responsibly; innovating how you purchase, prepare, and present food and beverage to create maximum value and minimum waste; and building environmentally sound partnerships with stakeholders throughout the supply chain while keeping the P+L strong.
- Access to MAD Academy’s alumni network, a community of ambitious change makers from across the globe.

Location: Copenhagen, Denmark
Class Structure: Monday–Friday, 35 hours. The course is taught in English.
Capacity: 25 participants

- From all over the world, all manner of backgrounds and origins, and all types of hospitality businesses.
We welcome applications from those with a minimum of five full years’ experience in hospitality and food service, and who are new (or soon to be) managers and owners. If you have more than 10 years’ experience, check out our advanced courses.

Scholarships
Our scholarships are intended to ensure that hospitality professionals whose employers cannot support their enrollment and who lack personal resources still have a path to a MAD Academy education. Scholarships are awarded based on perceived financial need and an applicant’s demonstrated potential as a change maker in the hospitality industry.

All scholarships require applicants to be actively pursuing a career in hospitality. Additional requirements apply to certain scholarships. Spots are limited to those who have shown long-term motivation to be leaders throughout their careers and in their workplaces, and those who demonstrate a passion, imagination, and drive for social and environmental sustainability in their communities. We are aware that the majority of our participants work full-time service jobs, and personal time is precious. Other than some light reading, there won’t be much to do between your acceptance and attendance. MAD Academy is an unaccredited program. You’ll receive a printed record (which also serves as proof of completion for your employers) and an invaluable collection of resources, tools, and notes. You’ll also become part of MAD’s remarkable alumni network—a global community of dedicated peers—and special access to future MAD events. Our advanced courses provide training to senior staff and business owners. Positions are limited to those with 10+ years of experience in said roles.
How much is general enrollment?
